Banana Loaf

Well hello
As it's the first day of our 31 Days of May challenge, I wanted to share with you a yummy treat to start off your month :) This is, what I call, 'Mummy's Yummy Banana Loaf'. We made it a few weeks ago whilst Mike and I had popped round for a cup of tea, and it was so easy, and so yummy!
Ingredients

 4oz butter
6oz sugar
2 eggs
3 bananas
8oz flour
1tsp cinnamon
First step is to melt the butter in a saucepan and add the sugar. Once it has melted and combined with the sugar, remove from the heat and give a good stir. Meanwhile, peel and mash the bananas in a bowl and add in the eggs. Once the butter and sugar mixture has cooled slightly, add to the bowl. Then, stir in the flour and cinnamon.
That is pretty much it! Now just put the mixture into a loaf tin, and put into the oven at for

As it is quite a think mix, when the time is up, it is worth sticking a knife or skewer into the centre of the loaf to make sure it is cooked all the way through. And here is the result :)


Mmmmm it is so yummy! Especially if it is still slightly warm.
